We did a mommies’ day at the spa and one of the fab mommies brought “watermelon & feta salad.” I looked at it and thought “no way” but was pleasantly surprised by how delicious it was and so simple.
Chop up watermelon into square pieces around an inch big. Add feta (I just crumbled up an 8 oz block) to your taste. Season with some fresh ground pepper.
Options..
chopped up fresh mint and a squeeze of lime juice to zest it up.
Balsamic vinegar and olive oil.
With or without the added options, it is delicious!

Actually any meal made with love is a good meal. But on special family date night I light candels,some jazz music. It adds to the ambiance of the evening. here it is.

1 (6 oz.) pkg. white & wild rice mix (I use UNCLE BEN’SĀ®)
1 stalk celery
1/2 (4 oz.) can drained mushroom stems & pieces
2 c. water
1/4 c. butter
2 cornish hens (about 1 lb. each)
2 tbsp. butter, melted
Optional (sm. chopped pieces of ham)

In casserole dish, combine uncooked rice mix with seasonings,the celery, mushrooms(my daughter hates mushrooms so just add as needed) and water. Cut cornish hens in half lengthwise down side of breast bone and be sure to put them cut-side down over rice. Brush with melted butter,some times I add basil to the melted butter, Mmmm! Cover w/ foil bake at 350 degrees for 1 hr then uncovered 30 minutes longer.
It may take a tad more of your time but you can make it a family event. Everyone can chop and dice , set the table. Makes for a great family date night!
One of our favorite summer recipes is fruit salad with tuna sandwiches. I try to do as little cooking with the hot stove and oven as possible. Our favorite fruit salad includes; strawberries, bananas, watermelon and grapes. Tuna sandwiches is simply a can of tuna mixed with mayonnaise and a little bit of lettuce on top. Yummy!

I often use this two-night plan:
Pick up enough chicken breasts, no bone, for two meals. Night 1: have hubby grill all chicken using favorite seasonings, and serve half the breasts with salad and veggies. Night 2: chop remaining breasts, heat tortillas, and make tacos with favorite toppings such as: shredded lettuce, tomatoes, refried beans, kidney or black beans, shredded cheese, cilantro, olives, sour cream, taco sauce, etc.
I set all the toppings in bowls on the counter, and the kids love creating their own masterpieces.
Asian Noodles are one of our family favorites.
Cook one 12 oz. package thin spaghetti noodles and drained. Make sauce: 2 TBSPS vegetable oil, 2 TBSPS sesame oil, 4 TBSPS soy sauce, 6 TBSPS vinegar, 4 TBSPS sugar, 4 TBSPS sesame seeds. Mix sauce and noodles. Top with sliced ham (or any meat), sliced cucumbers, grated carrots, scrambled egg slices, and thinly sliced green onions. ENJOY!

Lobster or Shrimp Salad
1. cut up honeydew, cantalope, apples, cooked potatoes into cubes.
2. Boiled a lobster or a pound of shrimps. Then cool it down to room temperature.
3. Mix mayonese, vinegar, and sweetened/condensed milk to taste. This is the dressing.
4. Right before you serve, mix dressing with fruits and potatoes. Mix in some lobster or shrimp meat. Save some to line the top of the salad.
5. My favorite part is to align the lobster or shrimp shells on the plate to decorate. Put salad mixture in the middle. Pour in remaining dressing on the top. Line remaining lobster or shrimp meat on the top.
Please note: Potatoes and fruits don’t sound like a good combo, but they will surprise you.

Jello! In the hot, summer months, there’s nothing more refreshing, than ice cold jello. My kids love all of the flavors, and I usually just add a can of Mandarin Oranges, or Fruit Cocktail, to spice it up. You can even make finger jello, if you have a little extra time.
